Lemon bars, also known as lemon squares, are refreshing, sweet and lightly tart. This recipe produces a perfect combination of both sweet and sour bars.

-3 eggs
-1 cup of softened butter
-½ cup of sugar
-2 cups all-purpose
-2 lemons, juiced

Directions:
-Preheat oven to 350 degrees fahrenheit.
-In a bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar.
-Press mixture into the bottom of a non-greased 9×13 inch pan.
-Bake for 15 to 20 minutes in the oven, or until the crust is firm or golden.
-In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour.
-Whisk in the eggs and lemon juice. Pour over the baked crust.
-Bake for 25-30 minutes in the preheated oven.
-The bars will firm up as they cool.
-Sprinkle powdered sugar over the cooled lemon bars (optional).
